Gingerbread House-December 2019 This 3 foot wide piece was created for the Buchanan House in Annapolis, Maryland. The gorgeous and history Buchanan House has been home to over 40 of the United States Naval Academy's Superintendents. President Franklin Delano Roosevelt was a frequent visitor to house. |

Gingerbread Ship- November 2019 Erin Schwartz of Stacked joined Atlanta based artist Karen Portaleo in creating this nearly 25 foot long Gingerbread ship. This ship was created for Carnival Cruise Line as they announced their newest ship the Mardi Gras. Like the Mardi Gras, the top deck included two pools, a tiki bar, basketball court, movie screen, double slide, (the first ever) working roller coaster on a ship and more! Other than gingerbread, the ship is decorated with candy canes, fondant, peppermint sticks, royal icing, pretzels, gumdrops, spearmint leaves, rock candy, gumballs, neccos, cookies and more! The ship was finished and displayed through the rest of the year in the Lenox Mall in Atlanta, GA. |
USO Luau- April 2018 This 3D, sweet pig was created for a Luau at and for the USO. The cake itself was Coconut Cake with a homemade Pineapple Compote and Vanilla Bean Italian Buttercream! As you can see in the pictures, the military members and their families sure did a great job "pigging" out on this cake! Every bit you see on this cake is edible! |

Holiday Hooligans-October 2017 An installation created by various Artists, put together by Irish Artist Karen Keaney. Erin Schwartz created the life-size punk rock Santa. Santa is of modeling chocolate and fondant. He features a fabulous mohawk, tattoos, an edible Naughty/Nice List and holds a sugar flame/lighter (which had special effects LEDs hidden within). |
Unseen Battles-May 2017 Stacked's own Erin Schwartz put together a small group of some of the best sugar Artists from around the world. These Artists gathered together to drive a BIG message and spread awareness about invisible illnesses via their edible art! Sweet Fairy Tales-May 2016 A wonderful group of international cake artists joined forces to bring Liz Marek’s incredible concept to life. We each re-created a nursery rhyme in cake form. All of the pieces and rhymes have been put into a book that can be bought on Amazon. Proceeds go to Project Night Night; a wonderful non profit that provides blankets, stuffed animals and books to homeless children. Renshaw Island-April 2016 The illustrious Liz Marek of Artisan Cake Company and Sugar Geek Show led a 3-person team consisting of herself, Jockan Jordan (of Dat Cake Place) and myself in creating Renshaw Island! This piece was created for the SoFlo Cake & Candy Expo in Miami Florida and was sponsored by the fantastic Cake Masters Magazine and Renshaw USA. Our team created a 6-foot tall pirate, giant treasure chest, two 8-foot tall palm trees and a throne all out of sugar! (minus the material for the thrown, as we didn’t want people to actually have to sit on the sugar!) Joe and I created the pirate chest and palm trees and we drove them about 1,200 miles from Virginia to Miami! This interactive display was a huge hit and we can’t wait to do it again! |

Be Red-December 2015 I am a member of the United Nations of Sugar Art. The UNSA is a coalition of Artist from around the World using edible mediums to raise Social awareness. Our first project was “Be Red” –was released on World Aids Day and raised both money and awareness for The Global Fund-accelerating the ends of AIDS, tuberculosis and malaria. My piece was based off of a sculpture Martin Hudáček and ended up getting additional media attention publications around the world! |
Capital Food Fight-November 12, 2015 "Give a man a fish, feed him for a day. Teach a ma to fish, feed him for life." That quote was our sub-theme of our cake for the Capital Food Fight for DC Central Kitchen; one of the biggest charity events in D.C. that is hosted by the world renowned Jose Andres. Myself, along with my two amazing assistants, Mimi Hood and Amanda Ferrell, created this cake during the live competition! The top rotated showing the transformation of our man into a chef and we paid homage to our quote with our French fish on the platter (yes, he has a mustache), Jose Andres' Snapper recipe in the book and of course with the fabulous fish on the board! I'm so grateful for this experience, my awesome teammates and being a part of raising $550,000 for DC Central Kitchen!!! And YES!!! We won! |
